Ingredients

  • 2lbs Large shrimp – butterflied & de-veined

  • 2 cups Vegetable oil
  • 2 cups Panic Bread Crumbs
  • 4 large Russet Potatoes (and baked potato toppings – butter, sour cream, salt, pepper, and green onions)
  • Mixed Greens
  • 1 Roma tomato
  • 3 tbsp Creole Seasoning
  • 4 eggs

Makes 4 servings and a complete meal!

Directions

  1. Pour the panko crumbs and flour in two separate plates so that each ingredient covers the surface.
  2. Peel shrimp (leave tail in-tact), de-vein, and wash shrimp then place in a bowl.
  3. Crack eggs into a bowl and whisk until fully mixed.
  4. Coat shrimp with creole seasoning, tossing so shrimp is evenly coated.
  5. Place one shrimp into flour, lightly coat, and shake until flour no longer falls off. Next, dip into egg batter and shake off excess egg. Place shrimp into panko crumbs and coat on both sides of shrimp. Finally, place coats shrimp on separate dish. Repeat until all shrimp are coated in bread crumbs.
  6. Pour oil into large 12 inch pre-seasoned cast-iron skillet on medium heat.

  8. Once oil is hot, quickly arrange shrimp in skillet, making sure they do not touch each other.
  9. Cook shrimp until bottom edges are golden brown. Turn shrimp over and cook until opposite side is golden brown, usually no more than 5 minutes.
  10. Place cooked shrimp onto a wired rack and place in oven.
  11. Repeat steps to cook remainder of shrimp.
  12. Serve immediately with cocktail sauce and enjoy!
