How to Make Fresh Seafood Paella Catalana 🥘 in How to Make Fresh Seafood Paella Catalana 🥘 in Barcelona, Spain like a Pro (like me). It’s pretty easy to make, but you REALLY want to pay attention to step 4 - without it the Paella will be disgusting. 

1️⃣ Grab fresh seafood from La  Boqueria market in Barcelona, Spain. Preferably clams, mussels,  squid, and a lot of prawns 🦐 

2️⃣ Bring rice 🍚, saffron, tomatoes 🍅, spices, and seafood to a kitchen with a ton of space to cook in. 

3️⃣ Equip this kitchen with the right materials - sharp knives 🔪 cast iron skillet, tongs, and a large Paella pan with gas burner 🔥 (can be found on Amazon)

4️⃣ In this kitchen there will be a highly experienced CHEF 👨🏽‍🍳 named Manuel, who has spent years cooking and developing recipes for some of the best restaurants and hotels in Spain. This chef has perfected the art of Paella. Hire this chef @volanatestkitchen to take you on a market tour and small group Paella Cooking class. Listen👂🏽and do EVERYTHING the chef tells you to do ✅ 

5️⃣ Under the watchful eye of the chef, prep then cook the prawns with salt, and pepper. Create seafood stock from scratch, cook rice, add seasoning, make Sangria 🍷, and eat tapas. 

6️⃣ Steam clams until the shells open. Add clams and prawns to cooked rice in a cool, decorative pattern. 

7️⃣ Enjoy! 

Congratulations 🎉 you have cooked a delicious seafood Paella Catalana, just like me 🙃😋 

But seriously, this class was one of the best experiences I had in Barcelona! If you’re looking for something fun to do in Barcelona, this is it! learned a lot, actually got to use my hands to make the food, and had a great time chatting with international travelers like myself. Plus, chef Manuel made everyone feel comfortable with his knowledge, professionalism, personality, and amazing skills. Highly recommend!

The Arc de Triomf is one of the most iconic landmarks in Barcelona, Spain, which is why I added it to my list of what to see in Barcelona! Here’s why the arch is such a special sight to see:

🧱 Instead of a military victory, Barcelona’s Arc de Triomf was built in 1888 as the entrance to Barcelona's Universal Exhibition for the World fair.

🌴 Located in the beautiful, palm-tree lined Passeig Lluís Companys, it is a classical monument with stunning sculptural and decorative finishes.

👷🏼‍♂️ The arch was designed by Josep Vilaseca to represent Barcelona's respect for the nations and provinces participating in the exhibition, and features a combination of red brick and neo-Mudejar style motifs. 

🛡 The arch's reliefs and shields represent agriculture, industry, commerce, art, and the coat of arms of Barcelona presides over the shields of the 49 Spanish provinces at the top. 

I’m so glad I had the opportunity to see stunning Arc de Triomf in person, It is a must-see landmark and definitely worth adding to your itinerary!

We FINALLY made it to #barcelonaspain 🇪🇸 Yo We FINALLY made it to #barcelonaspain 🇪🇸

You may have seen the vlog highlights from our trip (link in bio) but what you didn’t see was that it took 3 YEARS to get there. Let me explain. 

In 2017 I created a bucket list. 1st was Paris, then a majestic cruise on the Mediterranean Sea. Sounds nice, right? Well, I went to Paris in 2018 and early 2019 I started to plan a Mediterranean cruise. It was going to be an EPIC trip based out of Rome with additional stops in France and Spain. After planning for most of the year, saving every dollar we had available, and coordinating flights, hotels, activities, food, EVERYTHING…in December 2019 we finally booked our 7-day cruise leaving June 2020. With every passing month, we got closer to our trip. January 2020 came - I would call my sister and say “only 5 months left!” Then February, “4 months to go!” Then the unthinkable happened - MARCH 2020. 

The world shut down and my bucket list trip was literally cancelled overnight. The cruise line gave us credit to rebook to the next sailing, but every month the cancellations continued. “Well, maybe we’ll rebook for 2021! Surely things will get better….” I thought. But no, they didn’t. A few months later I caught what was going around and it took me down. I spent early 2021 quarantined at home, passed out on the bed, not eating, not strong enough to walk most days, barely being able to speak without heavy breathing issues. I was thankful to be alive, but it seemed like my dream to view the dazzling waters of the Mediterranean were slipping further away. 

But God!

My health returned and so did the sailings in 2022. We booked with our cruise credit and the trip was on! Then something magical happened - they upgraded us to the newest, BIGGEST ship! Praise God! This is my victory photo, this is what I’ve been waiting for and I am ready to CELEBRATE!! 🎉
